Chef Carlos Russo

Hello, and welcome to The Accidental Chef.

Let me tell you a little about who I am and how I got here — My lifelong love of cooking stretches back to my upbringing in a large Sicilian family. As a young boy, I would hover in the kitchen while my mother cooked family staples, like lasagna, veal marsala and other classic dishes.

I learned early about the lifelong question we Italians face —no, not whether to join the Mob — rather our seminal question has always been  “to brown or not to brown?” — our tomato paste, that is.

After settling in Acadiana more than 20 years ago, I learned the art of Cajun Cuisine — and the magic that could be spun from simple ingredients like flower, oil, cayenne and paprika.

For the last 10 years, I have delighted the most discerning palates in Acadiana with new, fresh interpretations of my family’s old world recipes.

In 2010, I began performing cooking demonstrations throughout Acadiana, including regular appearances at Rouse’s in Youngsville. The demonstrations were so successful, they prompted me to open The Accidental Chef Cooking School.

The Accidental Chef Cooking School exists to bring pleasure, joy and excitement to the cooking experience. My motivation is to create gastronomically delightful menus for my patrons’ enjoyment.

The Accidental Chef Cooking School provides an alternative to the mundane dining-out experience and offers the most gifted chefs for our guests’ training and delight.

The school is built on many years of experience in customer satisfaction and culinary expertise. My concept is unique but simple: small classes, the best chefs in Acadiana and one-on-one interaction with each of you.
